Ingredients:
- 2 cans sweet potatoes, drained and mashed (or two sweet potatoes, cooked and mashed)
- 1/3 cup plus 2 tablespoons margarine or butter, melted
- 2 tbsp granulated sugar
- 1/3 cup plus 2 tablespoons brown sugar, divided
- 2 eggs, beaten
- 1/2 cup milk
- 1 tablespoon OJ
- 1/3 cup chopped pecans
- 2 tablespoons all-purpose flour
- Crockpot
- Hand mixer
- Large bowl
- Lightly grease slow cooker
- Mix sweet potatoes, margarine, sugar, brown sugar in a bowl.
- Beat in eggs, milk, and OJ.
- Transfer to slow cooker.
- Mix pecans, 1/3 cup brown sugar, flour, and 2 tbsp margarine.
- Cover and cook on high 3-4 hours.
